Enriched Waffles
Ingredients:
1 ⅓ c 1 to 1 gluten free flour
2 ¼ t active dry yeast
2 T coconut sugar
1 t salt
1 ¾ c plant milk
¼ c water
2 T coconut oil
3 T ground chia seeds
Instructions:
Make the batter the night before you want to make the waffles to refrigerate overnight. Sift together the dry ingredients in a bowl. In a measuring cup measure out the milk and water and add coconut oil. Microwave for about 1 minute until the liquid is 120-130 degrees F. If the liquid is too hot it will kill the yeast and if it is too cold it will not activate the yeast. If you do not have a thermometer, I think of the ideal temperature being the temperature of a bath that you would put a sick baby into to break their fever, tepid not hot. Add the liquid ingredients to the dry ingredients and combine. Cover the bowl and place in the refrigerator overnight. Use a large enough bowl so that the batter can rise. When you return the batter should be foamy and puffy. Scoop out ½ cup onto an oiled and heated waffle iron and cook until golden brown. Top with your favorite waffle toppings
