Zucchini and Yellow Squash Tofu Scramble

Ingredients:

1 package firm tofu

1 zucchini

1 yellow squash

½ teaspoon avocado oil or other oil of choice

½ teaspoon salt

½ teaspoon paprika

2 tablespoons dried chives

2 tablespoons nutritional yeast

A dash of tumeric

¼ cup veggie broth for sauteing


Instructions:

Dice zucchini and yellow squash and saute over medium-hi heat in the oil and spices, except the tumeric, in a large skillet. If the mixture starts to stick add a small amount of vegetable broth or water. When the veggies are about halfway cooked and translucent crumble the tofu into small pieces into the mixture. Sprinkle the turmeric over the tofu and stir thoroughly. Simmer over medium-low heat until the vegetables are desired texture.
